SWEET POTATO, MANGO & PEAR PURÉE / / YELLOW ZUCCHINI, PEAR & YELLOW BELL PEPPER PURÉE

SWEET POTATO, MANGO & PEAR PURÉE:

INGREDIENTS:
2  Sweet Potatoes
1  ripe Mango
3 Pears

PREPARATION:

DIRECTIONS:
STEP 1: Rinse the sweet potato and scrub the skin with a vegetable brush to remove dirt. Rinse again, then peel with a veggie peeler and cut sweet potato into small chunks. Bring to a boil in a medium saucepan. Reduce heat and cook sweet potato chunks until tender (about 15 minutes). Drain and rinse with cold water.


STEP 2: Peel, core and cut the pear into chunks. Bring to boil in a small saucepan. Reduce the heat and cook gently until soft (about 5-10 minutes depending on the type of pear). Drain and rinse with cold water.

STEP 3: Cut the mango lengthways as close to the flat seed as possible into two slices. With a knife, cut each slice flesh-side-up into small squares, being careful not to cut all the way through the skin. Either cut cubes off or scoop the flesh out with a spoon.

STEP 4: Place cubes of mango, pear chunks and sweet potato chunks into a blender and blend until smooth.

YELLOW ZUCCHINI, PEAR & YELLOW BELL PEPPER PURÉE:

INGREDIENTS:
2  Yellow Zucchinis (or 5 Pattypan Squash)
2 Pears
2 Yellow Bell Peppers

PREPARATION:

DIRECTIONS:
STEP 1: Cut the pepper in half through the stem end. Scrape out the seeds and trim away the white membrane. Cut into smaller pieces and cook in a steamer basket for 10 minutes. Let cool then peel off the softened skin of the bell peppers.

STEP 2: Slice off the top and bottom of zucchini and cut zucchini into smaller pieces. Place in a steamer basket and cook for 5 minutes.

STEP 3: Peel the pears, remove the core and cut into chunks. Place chunks into the steamer basket and cook until tender.

STEP 4: Add pear, zucchini and bell peppers to blender or food processor and blend until smooth.

STORING AND SERVING:
Allow the puree to cool. Pour or spoon the puree into your Kiddo Feedo Freezer Tray, secure lid and freeze purees until solid. Once frozen transfer the cubes into zip-lock bags for long-term storage, allowing the tray to be ready for a a new food to store! Defrost portions as needed in your refrigerator using an airtight container. When defrosted heat the purée in a saucepan over low heat until you reach a desired temperature.
